How To Make Spiced Pumpkin Ice Cream Sandwich

Snicker Doodle Recipe by Ampersand

Preheat Oven to 350 deg F
2 cookie sheets

Wet ingredients
2 sticks of butter
1 1/3 c Sugar
1 1/3 c Brown Sugar
4 eggs

Combine butter and eggs and beat with a mixer until fluffy.
Incorporate eggs one at a time with butter and sugar mixture until well incorporated. Set aside.

Dry ingredients
4 cups all purpose flour
2 tsp baking soda
1 tsp salt

Combine and mix dry ingredients, and mix gradually in 1/3 portions until well combined into a cookie dough.
Scoop with a spoon or melon baller and then roll in your hands to make balls the size of a golf ball

In a separate bowl combine topping ingredients.
Topping
1/4 c sugar
2 tbsp cinnamon

Roll cookie dough in topping mixture then place on the cookie sheet about 3 inches apart

Bake in the preheated oven at 350 deg F for 14 minutes.

Check for a light golden color, remove and cool, before serving.
